The Magsaysay Center for Hospitality and Culinary Arts (MIHCA) and Paragon Testing Enterprises, Canada’s leading English language testing provider, signed a partnership agreement to facilitate the Canadian English Language Proficiency Index Program (CELPIP). MIHCA is the first CELPIP Test Center in the Philippines and the first general test sitting will take place on April 6, 2018.


The CELPIP Test is Canada’s leading English language test and is accepted as proof of English language proficiency for citizenship and permanent residency. CELPIP Test is accepted by the Immigration, Refugees and Citizenship Canada (IRCC), Real Estate Council of British Columbia (RECBC), and Immigration Consultants of Canada Regulatory Council (ICCRC).

Professional Culinary Arts students of the Magsaysay Center for Hospitality and Culinary Arts (MIHCA) were hailed as the Ultimate Chef Warriors in the Chef Wars competition at the recently concluded 10th National Food Showdown held last October 19-21, 201

Professional Culinary Arts students of the Magsaysay Center for Hospitality and Culinary Arts (MIHCA) were hailed as the Ultimate Chef Warriors in the Chef Wars competition at the recently concluded 10th National Food Showdown held last October 19-21, 2016 at the Camp John Hay, Baguio City, Philippines. 

 

Chef Wars, considered the main event of the National Food Showdown, is a 60-minute live cooking contest. MIHCA’s winning trio—Carla Felize C. Cruz, Prince Jeffrey C. Tan and Jaime Bañas—represented Team Luzon and bested the groups of Shangri-La's Mactan Resort and Spa of Team Visayas and Monster Kitchen Academy of Team Mindanao. Team Luzon was supported and coached by MIHCA Instructors, Chef Mike S. Navarra and Chef Joan D. Pineda.

 

MIHCA students prepared a 3-course masterpiece with shrimp as the main ingredient—Anchovy Glazed Shrimp set on Vanilla Scented Beignets, Open Face Thermidor, Salad, Calamansi Emulsion, Potato Leek Soup and Herb Soil as hot appetizer; Shrimp Flan with Calamansi Gelée, Herb Marinated Shrimp, Pickled Vegetables, Coral and Mango Aioli as cold appetizer; and Shrimp and Lapu-Lapu Roulade, Potato Fritters, Root Vegetables with Bacon Beurre Blanc with Chive Oil as the main course.

Costa Crociere S.p.A., the leading Italian cruise line, conducted the first Here for You Professional Culinary Basic Training Course at the Magsaysay Center for Hospitality and Culinary Arts (MIHCA) campus in Cebu City, Philippines. The program ran from April 20 to May 14, 2016 and is part of Costa’s effort to expand its training operations outside of Metro Manila. Under the direction and supervision of Executive Sous Chef Alberto Tada, 14 new Commis de Cuisine completed the comprehensive 18-day training.

Similarly, other trainings are being conducted at MIHCA’s Jakarta, Indonesia campus which started on May 16 and will run until June 4, 2016. The first batch of trainees consist of 14 Assistant Waiters for the Here for You Restaurant Intermediate, 15 Galley Utility for the Here for You Galley Basic, and 10 photographers for the Here for You Orientation. The courses are taught by Semuel Pandeirot, Mochamad Sarony, and Yulianto Nugroho, respectively.

Costa’s Head of Asia Shipboard Hotel Training, Andrea Tonini, spearheads and monitors all of Costa’s training programs in the Philippines and in Asia to ensure that they are aligned with the company’s new campaigns, “Here for You” and “Italy’s Finest.”

Magsaysay Center for Hospitality and Culinary Arts (MIHCA) signed a Memorandum of Agreement with Cruise Ship Catering and Services International N.V. Stabile Organizzazione Italia (CSCS), a member of Costa Crociere S.p.A., last January 5, 2016. The agreement calls for a joint undertaking to organize, establish, deliver and maintain a CSCS shipboard personnel program at MIHCA. The agreement was signed by Marlon R. Roño, Chief Operating Officer – Magsaysay People Resources Corporation; Alexander E. Querol, Chief Operating Officer – Magsaysay Maritime Corporation; Paolo S. The Magsaysay Center for Hospitality and Culinary Arts (MIHCA) organized the country’s first-ever Cruise and Hospitality Careers Convention last  August 29, 2015 at the SMX Convention Center, Pasay City, Philippines with 2,500 hospitality professionals and delegates from the Philippines’ major colleges and universities in attendance. 

The convention, which showcased the various career opportunities onboard cruise ships, had speakers coming from some of the world’s major cruise and hotel operators, specifically AIDA Cruises, Citadines Salcedo Makati, Costa Cruises, Gosaibi Foods Company, Magsaysay, New World Hotels Group, Princess Cruises and Resorts World. Notable speakers included Christian Weindorf, Manager, Fleet Talent Acquisition, Princess Cruises; Christine Schiftner, Director, HR Hotel Management and Fleet Services, Costa Crociere S.p.A; Andrea Tonini, Head of Asia Shipboard Hotel Training, Costa Crociere S.p.A.; Walter Kuhnert, Training Manager Asia, AIDA Cruises; Ian Hyndman, Managing Director, Gosaibi Foods Company; Susana Salcedo, Residence Manager, Citadines Salcedo Makati; Elpidio Beloso Jr., Director for Hotel Operations, Resorts World Manila; Mark Heywood, General Manager, New World Manila Bay Hotel; Randal Linhart, Resident Manager, New World Makati Hotel and Marlon R. Magsaysay Center for Hospitality and Culinary Arts (MIHCA) bagged four awards at the recently concluded Philippine Culinary Cup 2014 held at the SMX Convention Center last August 6 to 9. 

MIHCA student chefs Nadine Kristine D. Villafane, Randy C. Ramirez and Camille Rael C. Bitara won the gold medal for the Filipino Cuisine Challenge. Their winning menu was Tinola Rice Croquette; Shrimp Cake (Okoy) with Sinamak Vinaigrette; Cebu Lechon with Liver Sauce and Coconut Pumpkin and String Bean Puree; Hearts of Palm; and Green Papaya Salad with Palawan Honey Dressing. 

MIHCA instructors Chef Mike Navarra, Chef Mike Jacinto, Chef Shasahi Prakash and Chef Joan Fajardo snagged the silver medal for the Dream Team Professional category. Their winning menu was Poached Brill in Cirio Chorizo Chili Oil, Hazelnut Muffin, Uni Emulsion, Corn Salsa and Pear Marmalade; Beef Flank & Foie Gras wrapped in Cured Ham, Oxtail Ragu & Zucchini Timbal with Balsamic and Morel Jus; and Bale Pliable Ganache with Chocolate Soil and Yogurt and Mint Ice Cream. 

Chef Joan Fajardo also acquired the bronze medal under the Dress the Cake category for her Cherry Blossom Cake and another silver medal for the Wedding Cake category.

Magsaysay Center for Hospitality & Culinary Arts (MIHCA) brought home the bacon at the recently held Chefs on Parade 2013 at the SMX Convention, Mall of Asia when it won the prestigious L’ ASSIETE D’OR, for attaining the highest overall ranking points.  L’ ASSIETE D’OR is awarded to one team amongst a group of contenders in the GOLD Level in the Filipino Market Basket Category.
 
Besides the Filipino Market Basket Category, MIHCA Culinary Arts students participated as well in the  Continental Category, where students received Diploma award for the entries submitted.

Asia CEO Awards, presented by the American Express, represents the grandest alliance of local and international business leaders who promote the Philippines on the world stage.  The award ceremony is touted to be one of the largest events in the Asia-Pacific region.
 
Presented by PLDT Alpha Enterprise, the award recognized Ho’s tireless and inspiring efforts in transforming Magsaysay into becoming one of the trusted and largest human resource companies in the Asia Pacific region. Ho’s affiliations with the APEC Business Advisory Council, PECC-ABAC Joint Task Force on International Labour Mobility, Asia Society New York, The Steamship Mutual Underwriting Association Bermuda Limited and the Hague Process on Refugees and Migration, has allowed her to rally her vision of a global framework that benefits the sending and receiving economies as well as the global worker. The award was received by her children, Alexandra Maxwell Cecala and Jesse Maxwell.

PIER LUIGI FOSCHI Chairman of the Board of Costa Crociere SPA visited MIHCA Manila last October 25, 2012. Alex Querol- COO and SVP of Magsaysay Maritime Corp. (MMC), Reny Garcia – Institute Director, Chef Paolo Guevara – Culinary Program Director and other employees, instructors and students of MIHCA welcomed  Mr. Foschi with warm cheers and explosive smiles.
 
During the visit, Mr Foschi also witnessed the RFE Technical Trainees performing a dance number using the song “Bonjourno Smile,” as a student performed  flairtending right after. 
 
Mr. Foschi inspired everyone by giving a heartwarming talk to the RFE Technical delegates who will soon embark Costa Crociere.
 
Costa Crociere is one of Magsaysay’s valuable principals.  MIHCA is Costa’s preparatory campus in the Philippines and Indonesia and has provided numerous customized training programs for Costa’s crew members.

On July 13, various culinary enthusiasts, students and kitchen experts went to SM MegaMall Bldg A to take part on Flavors Mega Food Sale Expo 2012.  As the event’s official kitchen partner, MIHCA’s chef instructors Jon Chua and Mos Grau developed and demonstrated on stage 10 sumptuous dishes which were gladly savored by mall goers, food bloggers, and culinary professionals .  With their MIHCA students, both chefs went through a 5-hour cooking marathon that demonstrated various food items available at SM Hypermarket; from vegan cuisines to easy-to-cook lunches and more intricate dinner plates. This successful event is another manifestation of MIHCA’s undying support to the growing culinary industry.

Joyce Navoa is the new Administration Assistant. Her friendly smile greets prospective students of the Manila campus. Joyce reports to Student Affairs and Administration Manager, Abigail Ann Canaria.
 
Jaqueline Timola is the new Marketing Officer. Previously, Jacque worked as a Photojournalist at NPPA Images for Yahoo! Philippines. She completed her Bachelor’s degree in Journalism at the Polytechnic University of the Philippines. Jacque reports directly to MIHCA’s Institute Director Reny Gacia.

Reny brings to his position over 25 years of management experience in the hospitality and cruise industry, including his most recent position as Vice President for the Cruise Group of Magsaysay Maritime Corporation. His credentials include working for top-notch multinational organizations namely, the Westin Philippine Plaza, Mandarin Oriental Manila, Star Cruises, and Norwegian Cruise Lines, where he extensively performed leadership roles.
 
With his breadth of hospitality and cruise experience, Reny will bring to MIHCA a new vision and fresh perspective. “I am looking forward to contribute to bringing my team and MIHCA to the next level of training and service.  MIHCA has been at the forefront of training and producing job-ready professionals and we are excited to open more career opportunities to more students,” said Reny.

The first Open House happened on July 12, 2012 at MIHCA Manila while the second event happened in MIHCA Makati on July 19, 2012. The events were attended by top managers and executives from shipping agencies, schools; publishers and editors from newspapers and magazines. In Manila these included Harborscope President Zeny Magnial, Wallem Maritime Services Inc. Training Manager Chief Engr. Ronald Perena, OSM Training Manager Capt. Lennie Arroyo, Colegio de San Juan de Letran DEAN of College of Business Administration and Accountancy  Cristina M. Castro – Cabral, Ph.D, and Polytechnic University of the Philippines Chairperson Luzviminda Tugade. While in Makati some of them were: Flavours Editor-in-Chief Dolly Zulueta, Chief Photographer Rafael Zulueta and Business Development Manager Jamie Venturina, Cook Magazine’s Advertising Manager Marlon A. Aldenese, Cook Eat Now’s Anzenne Roble, Dante Alighieri’s Marga Ocampo, and Travel Life’s Mitos Lusterio and Lorraine Banta from Scanmar.
Guests were introduced to MIHCA’s new Institute Director Mr. Reny C. Garcia. Prior to being appointed as MIHCA Institute Director, Reny was the Vice President for the Cruise Group of Magsaysay Maritime Corporation.
 
Guests were also given a tour around the MIHCA facilities and were engaged to participate in different activities. In Manila Campus they experienced Chicken Trussing led by Chef Mos Grau, Cupcake decorating by Chef Nap Carbonell, Art of Towel Decorating by Sir Allan Dollesin and Barista and Cocktail Demo by Sir Ernie Mesina. Guests were given cocktail drinks at MIHCA’s fine dining restaurant Illumine. Then they also visited the state of the art Computer Lab, language training and IATA travel courses were discussed. And finally, the guests had a sumptuous lunch at the Robert Hall.
 
In Makati Campus, the guests were able to witness Cocktail Demo, Plating and Blind Tasting activity and were toured around the kitchens, butchery classroom, housekeeping mock up rooms and the coffee bar. After which they were also served with an opulent lunch.
 
Be ready for 2013 because MIHCA has yet another interesting activity in store for the Open House event.
